Chateau D'Yquem 2007

Château d'Yquem is the most celebrated Sauternes estate in the world, and the only Premier Cru Supérieur in the 1855 Classification. Its wine is made from Sémillon and Sauvignon Blanc grapes affected by noble rot, harvested berry by berry in successive passes through the vineyard, with yields so low that each vine yields roughly a single glass. After fermentation in new oak, the wine matures for around three years before release.

2007 is one of the great Sauternes vintages of the 2000s, and with close to two decades of bottle age this Yquem is now showing real complexity: dried apricot, orange marmalade, saffron, honey, and toasted almond, carried by a long, vibrant finish that keeps the sweetness fresh. It will continue to develop for decades. Pair with foie gras, Roquefort, or tarte tatin, or serve on its own as a finale.
